Autolyzed yeast (Yeast Extract)

About This Project

Due to the growing human need to supply food and micronutrients to the body, the use of supplements can meet basic human needs to a large extent. Hydrolyzed yeast (yeast extract) is prepared as a nutrient source from Saccharomyces yeast as the main ingredient. It is rich in vitamins, proteins and essential substances for growth and development. Yeast extract is known as a useful and natural food supplement and its various products are used by humans. Yeast has been used by humans as a factory for producing proteins and nutrients for many years, and with enzymatic processes, this cell can be used as a useful and nutritious substance for the growth of various cells from bacteria to animal cells. Compounds of this substance include essential amino acids, which are normally produced by this yeast. The main active compounds in yeast extract contain all B vitamins except vitamin B12, except brewer’s yeast with vitamin B12. ) Is also enriched. B vitamins include thiamine (B1), riboflavin (B2), niacin (B3), pantothenic acid (B5), pyridoxine (B6), folic acid or folate (B9) and biotin (H) in yeast extract. Yeast extract as the best source of natural vitamins has attracted a lot of attention. In yeast extract minerals (about 14 types of minerals) are found, especially chromium, phosphorus and selenium. Zinc, iron, copper, magnesium, manganese and potassium are other minerals in this valuable substance. According to reports, chromium in yeast is the best food source of chromium. Yeast also contains fiber, which is reported to be about 18-20 grams of extractable fiber per 100 grams of dry yeast. One of the valuable ingredients in yeast is beta-glucan. Beta-glucan is also a powerful antioxidant and is very effective in strengthening the immune system.

This substance is currently produced for three major types of consumption in the world, including:

1- Food industry (used in making pasta, prepared soups, fortification of flour and bread and similar items).

2- Supplements for livestock and poultry (substances in yeast extract and yeast body play an important role in strengthening and increasing the animal’s appetite and providing the animal’s needs).

3- Laboratory and pharmaceutical uses (preparation of bacterial culture media, production of vaccines and bacterial products, production of tonic and appetizing pills, cosmetic uses and similar cases).
