Application of invertase enzyme in industries

Invertase (β-Fructofuranosidase; EC an important commercial enzyme and is used to hydrolyze sucrose in various products. Sucrose hydrolysis produces an equal combination of glucose and fructose, known as invert syrup, and is widely used in the food and beverage industries. The enzyme is also used to make invert syrups, to reduce or eliminate sucrose, in the cosmetics, pharmaceutical and paper industries, as well as enzyme electrodes to detect sucrose.
